Known as @Chef_Rouge on social media, David Mottershall is a critically acclaimed and award-winning chef who has been building his culinary reputation for over 20 years. "It all started when I was 14, working as a dishwasher in Port Elgin" he explains. "I picked up some fries out of the fryer that were burning and Chef asked me what I was doing. I said 'I'm pretty sure they are burnt Chef'." Following this, he was then given the opportunity to work on a line, and his passion for the industry was ignited. David completed Georgian's Cooking Apprenticeship Advanced program in 2001, and has been serving up culinary excellence ever since. His second restaurant began as a startup in the back DAVID MOTTERSHALL COOK APPRENTICE ADVANCED, 2001 CHEF, BOGSIDE BREWING of a Toronto bar. To expand, he launched what would become the first successful Canadian Kickstarter campaign to open a restaurant, surpassing his $25,000 goal within a week, and this new restaurant, Loka, would be voted best Toronto restaurant of 2015 by NOW Magazine. David was also featured by Toronto Life magazine in 2016 and named by Huffington Post as one of 20 Canadian chefs to follow that same year. In 2019, he helped open Bogside Brewery in Prince Edward Island, with a Salumeria attached. David is dedicated to highlighting the importance of local farmers, fisheries and agriculture, using his high social media profile to advocate for locally sourced goods and to promote a zero-waste philosophy. Recalling his experience competing on an episode of the Food Network's Chopped Canada: "I made it to the final round, and was taken down by an Asian pear, quiche Lorraine and gummy bears," he says with a chuckle. "It was a cool experience. I had a lot of fun and cooked the best I could.
